This soup is a healthy lunch-time favorite in our house. It’s rich, smoky, a touch spicy and very hearty. The star is the avocado-lime salsa though, which brings it to life with its bright, tart, and creamy contrast.
The bonus side is this soup is great if you are dieting, for Meatless Monday, and it re-heats well. Personally, I don’t think diet when I eat this, because it’s hearty, flavor packed, and delicious.
SMOKY BLACK BEAN SOUP
- 1 (15-ounce) can black beans, rinsed and drained
- 1/2 cup water
- 1/2 cup strong coffee
- 1 (14.5-ounce) can fire-roasted diced tomatoes, undrained
- 1/2 cup salsa, your favorite (I use Rick Bayless’s Fire-Roasted Salsa)
- 1 chipotle in adobo, minced ( can substitute 1 tsp chipotle powder, if needed)
- 1 teaspoon cumin
- salt & pepper to taste
- sour cream & avocado-lime salsa for serving
- 1 cup diced peeled avocado
- 1 lime
- zest of 1/2 lime
- 2 Tablespoons fresh chopped cilantro
- 1/2 teaspoon of salt
Place beans in a medium saucepan. Mash beans slightly with a potato masher. Add water, coffee, salsa, chipotle, cumin, and canned tomatoes with juice. Cover and bring to a boil over high heat; reduce heat, and simmer 8 minutes. Uncover, and cook 2 minutes or until soup is slightly thickened.
Meanwhile, time to prep your Avocado-Lime Salsa. Cut and dice your avocados. I like to dice mine in the shell and turn them out. It allows for control without smashing or wasting any of the “meat”.
Add chopped cilantro and zest of 1/2 the lime.
Now, juice the entire lime over the mixture. Get as much juice and pulp as you can and stir into mixture.
Sprinkle with 1/8 teaspoon of salt. Now it’s ready to serve!
Ladle soup evenly into each of 4 bowls; top evenly with Avocado-Lime Salsa, and, if desired, sour cream.
I like to add pico de gallo or pickled red onions. That being said the Avocado-Lime Salsa is of paramount importance to this soup. It is the star of this dish and the soup simply wouldn’t shine so without it.
That works out to be dinner or lunch in about 15 minutes, but I urge you to make it a day ahead. The flavors are more developed the second day.
