Valentines is around the corner. It’s always nice to give or receive something special, something unique, and most importantly something made with love. Nothing says you’re the bee’s knees like home baked goods.
This is like so many things we make in our kitchen: completely customizable! You use your favorite brownie recipe and/or mix, your favorite jam, and you can flavor your cheesecake as you like. For instance: Caramel Brownie Mix with Cheesecake and Pear Jam -oh my; or Milk Chocolate Brownies with Amaretto Cheesecake and Peach Jam – it could happen!
We went for a more traditional route. Strawberry-Raspberry Jam with Fudge Brownies and Cheesecake. To be honest the end result tastes like Black Forest Cheesecake. My husband loved them. This is actually a big deal – you see my husband is not a brownie fan or much of a chocolate fan for that matter. Even if you leave the cheesecake bit out, I encourage you to swirl some delicious jam into your next batch of brownies for a fun fruity twist!
JAM & CHEESECAKE BROWNIES
- `1 package of your favorite brownie mix
(or your recipe) + plus ingredients to make same
- 1 – 8 ounce package of cream cheese, room temp
- 2/3 cup sugar, or more to taste
- 1 egg
- 2 Tablespoons melted butter
- 1 Tablespoon vanilla extract
- 1-2 teaspoons lemon zest
- 1/2 cup your favorite jam

Preheat oven according to package or recipe: mine called for 325 degrees Fahrenheit.
My brownies also called for 1/2 cup oil; 1/3 cup water; and two eggs.
Whisk eggs, oil, and water in a medium bowl and stir in brownie mix.
Set your brownie batter aside ~
Combine cream cheese, melted butter, and sugar in stand mixer.
Beat on medium speed for about 2 minutes, until “creamed” and
then add one egg, beat on medium-low until incorporated.
Now add your vanilla and lemon zest and beat another minute.
Scrape down sides of bowl and set aside ~
Now measure up 1/2 a cup of jam.
Prep your brownie pan. You can use butter or parchment – I like Baker’s Joy.
It makes me bake with joy, true story.
Let’s get ready to layer up some sweet, sweet goodness.
Pour half of the batter into your pan and spread into an even layer.
Top with the cheesecake a create another layer.
Tip: you can thin your cheesecake filling with 2-3 Tablespoons of milk
if you want it to pour easily.
Next, put about half (1/4 cup) of the jam into a thin layer on the
cheesecake and finally, top with the remaining brownie batter.
In order to add some lovely swirls and more jam goodness we are going to use the
other 1/4 cup of jam on top.
I use a Tablespoon and put dollops randomly on top of the dough;
and then using a butter knife slice through the layers in a wave-like pattern –
first vertically then horizontally. Isn’t it lovely? I think so.
Now bake according to the package directions. Keep in mind we need to add a bit of time
since we increased the volume with cheesecake and jam. Mine called for 30-40 minutes.
I recommend still checking early, but also adding 8-12 minutes to your cooking time.
The results are quite lovely. You can slice into bite-sized pieces, full squares, or even use a heart shaped cookie cutter.
