Grilled Steak with Tomatoes & Scallions

It’s that time of year. Time to enjoy your backyard with a cool glass of iced-tea or a cold beer. Time to cook outdoors instead of heating up the house. Time to fire up the barby!

This is a great quick recipe that you can make any night of the week because it takes less than 30 minutes to make the whole shebang. It’s only five ingredients too (not counting seasoning the steak, if you choose to do so). So simple and an entertaining worthy dish. We served ours with corn, which we also grilled, and couscous which only required heating up the kettle and following box instructions. It was a beautiful and relaxing meal.

Grilled Steak with Tomatoes & Scallions

GRILLED STEAK WITH BALSAMIC TOMATOES & SCALLIONS

  • 1 Tablespoon olive oil
  • 4 steaks (at least 6 ounces each) – flat-iron, Rib Eye, or whatever you prefer
    coarse salt & ground pepper
    we also love Beau Monde Seasoning on our Steaks, optional of course
  • 2 pints cherry tomatoes
  • 1 bunch scallions trimmed and cut into 2-inch lengths
  • 2 Tablespoons balsamic vinegar

DIRECTIONS: Set steaks out to come to room-temperature; pat dry to remove any moisture. Season both sides with salt & pepper or we also use Beau Monde Seasoning.

Grilled Steak with Tomatoes & Scallions

Heat the grill; clean and lightly oil grates – we use canola for this as it has a higher smoking temperature than olive oil.  Prepare double layer foil packet for grill: place tomatoes, scallions, drizzle with oil & balsamic, and add a generous pinch of salt & pepper; close packet and set aside.

Cook steaks (for ny strip or flat iron) about 4 minutes per side for medium-rare.  Transfer steaks to a plate and tent with foil – let rest for about 10 minutes while you cook foil veggie packet.

Place foil packet on grill, once you remove steaks, and let cook for 6 to 8 minutes to soften veggies.

Transfer veggies and sauce from packet to a bowl. Serve on top of steaks with our without sauce. Enjoy!
