This is a great appetizer! It’s sweet, salty, it has bacon, and potatoes. Yes, yes, yes! It took a little time to roll them up, but in under 30 minutes of oven time you have a unique and tasty treat! Plus, you can mix it up with sweet potato tots, different jams, any cheese you love, and don’t be afraid to add a strip of jalapeno or red bell pepper!
JAMMY BACON TOTS
- 40 – 50 frozen tater tots, thawed to room-temperature
- 1 (16 ounce) package of bacon, roughly 16 – 20 slices cut into 1/3rds
- 1/3 cup jam
- 1-2 ounces of cheese, cut into small cubes OPTIONAL
DIRECTIONS:Preheat oven to 375 degrees Fahrenheit.
Line a cookie sheet with foil and place a cooling rack on top of the pan. This will allow the bacon to crisp on all sides and makes for super easy clean up!
Cut each bacon strip into 3 pieces. If you have really long bacon slices you can do quarters, but you want it to wrap securely around your tater tots! Plus… more bacon? Yeah…
Wrap each thawed tater tot in bacon, add a small bit of cheese in the center if you like or you can cut the tots and insert it the cheese before wrapping, and place on top of the cookie rack. Using a silicone, or other, brush glaze all the bacon with jam.
Bake about 10 to 15 minutes at 375, then increase the oven to 400 and let them cook another 5-10 minutes. Watch them pretty closely after 5 minutes, we want the bacon to firm and crisp up without burning. Serve warm.
