If you have been on Pinterest you have probably seen the glorious camping idea: dipping campfire roasted marshmallow in Baileys liqueur. Yes, pure genius! Dear Whomever You Are, you get a gold star… okay two or three gold stars. I had to try it and I already had the perfect recipe in the back of my mind: Toasted Marshmallow Shake from The Good Stuff Cookbook by Spike Mendelsohn. This book is golden. Buy it. Cook from it. You are very, very welcome. 😉
As for the shake. Well it is creamy, roasted, boozy goodness. I highly recommend you serve it to people you really like, because it’s a frosty-warm hug in a glass.
ROASTED MARSHMALLOW & BAILEYS SHAKE
- 1 16-ounce bag jumbo marshmallows
plus additional for garnish, or reserve a couple…
- 1 cup whole milk, or omit and add more Baileys. Just sayin’
- 1 cup Baileys Irish Cream Liqueur
- 2 heaping cups vanilla bean ice cream
Whipped Cream Topping
- 1 cup heavy whipping cream
- 3-4 Tablespoons sugar
- 1 teaspoon vanilla extract
DIRECTIONS: Preheat Broiler with rack in upper third of oven.
On a tray lined with foil spread out marshmallows (reserving some for garnish if you choose – I bought extra… I mean more marshmallows, how is that bad?) Cook under broiler for about a minute; remove and flip marshmallows or stir around; return and cook for 1-2 more minutes or until reach desired color. Set aside to cool.
Combine milk, booze, ice cream, and toasted marshmallows in a blender; blend for 3-5 minutes. Meanwhile….
Whipped Cream Topping: Whip cream and sugar until almost stiff; add vanilla and beat until the cream holds peaks.
Pour milkshakes into glasses, dollop with whipped cream, and garnish with pre-toasted or soon-to-be toasted marshmallows. I toasted my garnish mallows with a creme brulee torch, but the oven method is fine too…
Now for the best part – Drink!
Booze + Milkshake = Summer Porch Time Bliss
