Here is some good ol’ blog lovin’ going out to Natalie the amazing blogger behind lifemadesimplebakes.com. I used her copy cat cosmic brownie recipe to surprise my youngest nephew for his 15th birthday. Brownies are his favorite dessert and Little Debbie Cosmic Brownies are naturally a grocery store purchase fave for him as well.
I had a lot of fun with it and made them in this Wilton mini-jelly roll pan. I got it for $12 (after coupon) at Joann’s Fabrics – along with the candy coated sprinkles that make these brownies “cosmic.” So not only were they Homemade Cosmic Brownies, but Giant ones – oh yeah, Baby! Birthday worthy brownies for a birthday teen.
Now to be more down to Earth, I made the biggest, messiest mistake of my kitchen “career” while making these. I guess my brain was in too many places… I was jamming to hard to Pandora radio… I’d try to blame the dog, but geez – not even plausible in this situation… Anyways, when I was alternating milk and cocoa-flour I turned the mixer off, unlocked and lifted the head, added loads of the flour mixture, put down the head, and bam! Instead of flipping the level all the way forward on the right to lock it…. yep, I slammed that puppy on HIGH and Boom! Puff! Dusty-Cocoa Cloud of mess. I’m sure I will find cocoa-flour until I move and completely clean out that kitchen. I’ve never done something so silly and/or messy in all my years in the kitchen. But, I didn’t freak out or melt down; instead, I laughed until tears came out and cleaned in a frenzy before my lil’ birthday bunny arrived.
Onwards and Upwards, this is an AWESOME recipe! So much better than the store bought version. Super easy and super fun. Try it!
