This is basically Italian Hummus. Pesto, cannellini beans, and pine nuts. It is a super quick and easy appetizer, especially if you have pesto on hand. You can also use it as a spread for sandwiches.
Bonus this is a healthier dip and great for veggies trays. We served ours up with pita chips and red bell pepper strips.
PESTO BEAN DIP
makes about 1 cup
- 1 (15 ounce) can of cannellini beans, rinsed
- 1/4 cup pesto
- 1/4 cup pine nuts, toasted
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 Tablespoon EVOO, good quality
- additional pesto and, or toasted pine nuts for serving – optional
- crushed red pepper
Directions: In a food processor combine the first 6 ingredients and puree until smooth (or whatever consistency you desired); top with extra pesto and additional toasted pine nuts and serve!
