Bananas Foster Donuts | Dessert Donuts with Booze. Celebrating 100 Posts!

One hundred posts! 1oo! Can you believe it? I can’t! These ten and a half months have flown by and looking back I already have quite a few favorites from just this one hundred.  Mostly though I think about the 100+ recipes I’ve made, random dinners, short-order breakfasts, and lunches I’ve prepared in addition to my blog posts.  I spend a lot of time in the kitchen! And somehow I still love it.  Sharing great recipes and recanting my experiences here is most certainly rewarding.  So thanks for sharing a piece of my kitchen and heart ❤

To celebrate this small landmark I thought I’d tackle something new and different -that I haven’t posted about before. DONUTS!  A few years back, circa 2009, my Dad bought me donut (doughnut) pans for my birthday.  I have the gambit: regular, mini, and even heart shaped.  They are fun and dangerous, because baked donuts… let me tell you easy-peasy deliciousness.  I thought I’d try and combine a great recipe I developed and have never posted, Bananas Foster Muffins, into a round and fabulous treat.  I liked the result, but it still doesn’t have that amazing wammy of flavor the muffins do.  So don’t be surprised if this one gets a revival in 101-200 post zone. 😉

                                       makes a dozen large donuts

  • 2 1/4 cups cake flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon allspice
  • 1 cups brown sugar
  • 2 large eggs
  • 4 Tablespoons butter
  • 1 cup banana, mashed
  • 2 Tablespoons each: Dark Rum & 99 Bananas liqueur
can substitute extract for non-alcoholic vs.

  • 1 cup confectioners’ sugar
  • 1 Tablespoon brown sugar
  • 2 1/2 Tablespoons butter, browned
  • .5 ounces each: Dark Rum & 99 Bananas liqueur
can substitute extract for non-alcoholic vs.
  • 2 Tablespoons milk
  • 1/2 cup pecans, chopped

DIRECTIONS: Preheat oven to 425 degrees.  In a medium/large skillet over medium-high heat melt butter; add bananas & brown sugar.  Cook for 2-3 minutes until it begins to caramelize and thicken; add liqueurs. Flambé (can skip if you don’t want to play with fire, simple cook over medium heat for another minute or two); transfer to a clean mixing bowl to cool.

In a medium mixing bowl combine the dry ingredients: cake flour, baking powder, salt, and spices; set aside.  Once bananas foster mixture has cooled ( I set mine in the fridge for about 10-15 minutes); whisk in eggs – temper if still warm! Mix dry and wet mixture together and transfer to a zip lock for easy piping into donut pans.  Grease pans with cooking spray and pipe donut cavities half-way full.  Bake 4-5 minutes or until the tops of the donuts spring back when touched.  Let cool in pan for 3 minutes before removing.  Repeat with remaining batter; once all are baked prepare the icing as instructed below.

Glaze: Add 2 1/2 Tablespoons of butter to a microwave safe dish, cover tightly, and microwave for 3-4 minutes, until brown; set aside to cool.  In a small bowl, stir together all the ingredients; whisk until the mixture is smooth. One at a time set the donuts face-down into the icing, carefully lift, twist, and then press or sprinkle any desired toppings while still freshly iced.  Repeat.

The icing will set pretty quickly and you will be on your way to banana, rum, nutty, donut heaven.

The nuts of course are optional, but they really make it over the top fantastic.  I can’t wait to experiment further with this recipe and I hope y’all enjoy this dessert rendition of baked donuts!
