Potato Skin Dip | An Epic Mash {Everything you love about Potato Skins mashed up into an epic dip or side dish}

Superbowl weekend I made this dish.  It was a culmination of an appetizer I love {potato skins}and a dip recipe {loaded potato dip}, which is a play on the same ingredients.  The dip didn’t have the heart of wanted I want though – potatoes! Fluffy, salty-skinned potatoes.  There are a few different takes on the idea and Pinterest, but none of them really had potatoes, or the best part {in my opinion} of the appetizer: the crispy, salty potato skin.  So I roasted some potatoes, shredded them up in the food processor, started adding great dip ingredients… basically until my dish runneth over.  The result was an epic dip {or side dish}, sure to please.

This makes a hearty amount of dip perfect for a good gathering.  If you have a smaller group and don’t want leftovers I recommend cutting the recipe in half!  Or go for the gold and you can serve it up as a side dish as well, it is after all just some jazzed up mashed potatoes!  On that point, if you want it to be a more creamy-cheesy style dip: omit one potato and add 1 block of cream cheese.  That should do the trick.

I served this potato skin concoction with Gardetto’s Roasted Garlic Rye Chips & some Cape Cod Waffle- Cut Potato Chips; but, Fritos would also be fabulous.  The Rye Chips were my favorite combo.  We also refrigerated the leftover dip and heated it up the next morning, adorned it with a fried egg, and well… yeah, still epic.  This is a recipe I know we will make and enjoy again and I hope you like it!

POTATO SKIN DIP | An Epic Mash

For baking potatoes:

  • 1 Tablespoon Oil
  • 2 Large Russet Potatoes
  • 1/2 Tablespoon of Coarse Salt

For dip:

  • 1 (8 ounce) block of cream cheese, room temperature
    or two if you are making the creamier version
  • 1 cup mayo
  • 1 cup sour cream
  • 1 (8 ounce) block of sharp cheddar, shredded
  • 6-8 slices of bacon, cooked & diced
  • 3-4 scallions, trimmed and sliced
  • S & P to taste {taste your serving chips first! They might be super salty…}
  • 2 Tablespoons of butter, cold & diced

For serving: 

  • chips for serving: potato, rye, fritos, etc.
  • additional: bacon, sour cream, green onion, jalapenos

DIRECTIONS: Preheat oven to 350 degrees. {Place foil or cookie sheet on lower rack to catch any drips}  Wash potatoes thoroughly with a stiff brush and cold running water. Dry, then using a standard fork poke 8 to 12 deep holes all over the potatoes. Rub with oil and then salt. Place potatoes directly on top rack in middle of oven. Bake for an hour or until skin feels crisp and center is soft enough to pierce with butter knife.  *If cooking more than four potatoes, add an additional 15 minutes time. This is an Alton Brown method, thus perfect…  {Note: you can make the potatoes in advance and refrigerate! They reheat well!!}

Cool your potatoes, until you can handle them enough to chop long pieces you can feed your food processor.  Place your shredding blade in your food processor; shred the potatoes. Transfer to a very large mixing bowl. Shred the cheese; repeat the last step.

Now add you cream cheese, mayo, and sour cream.  TASTE – add Salt & Pepper as desired.  I laid low on the salt, because both my chip choices were extra salty… I used about 1/2 Tablespoon of fresh cracked pepper though.

Mash, stir, spread, and mix it all together.  Transfer to a very large baking dish, mine was 11-inches round and a little over 2-inches deep.  It’s a large casserole dish… Dot with your diced butter (2 Tablespoons) and bake in your 350 degree oven for 30 to 40 minutes or until it begins to brown and crisp around the edges.

Adorn with your cooked bacon and scallions.  Serve up with some crispy, salty chips!  Or spoons… It is like the best baked potato ever mashed into glorious comfort.
