Easy Crockpot Chicken | A simple roast of chicken breast perfect for make-ahead meals, salads, or just clean eating protein!

For quick and clean protein, for weekday prep, chicken salad, or enchiladas, or any recipe in which you need cooked chicken – Easy Crockpot Chicken.  It’s easy, simple, and good chicken.  Plus your crockpot does most the heavy lifting.  Extra bonus, yes there is another bonus… you get 5-6 cups of low fat chicken stock, which is perfect for soup, stew, or chicken and dumplings.

I use this recipe to shorten dinner prep during the week.  When I work 45+ hours in a week it helps to have some of the cooking time taken out.  Quite frankly it can make the difference in keeping me out of the drive-thru and in my kitchen.  Whether we shred this chicken up for chicken salad, serve it gravy and mash, or use it in Mexican fare: enchiladas, taquitos, tacos, chalupas, etc.   When your protein is prepped it is plain and simple easy to whip up a quick & healthy meal!  So I rely on it and hope even if you are just making Aunt Elda’s famous chicken salad – you give it a chance.

Sc Chicken Shredded

EASY CROCKPOT CHICKEN | Simple, shreddable, edible roast

  • 6+ lbs. boneless, skinless chicken breasts
  • 1 Tablespoon salt
  • 1 Tablespoon black pepper black pepper
  • 1 Tablespoon garlic powder
  • 2 bay leaves
  • 2-4 cups of chicken stock (or water); enough to cover the chicken
    {as seen below}

Directions:  Place chicken breasts in slow cooker, sprinkle on seasoning and add liquids.  Cover and cook on low for 8 hours, or high for 4-5 hours, or until the chicken shreds easily with a fork. (Less or more chicken will mean less or more time in zee pot.)

Remove the chicken and allow to cool before slicing, shredding, chopping or just store in an air-tight container. You could also freeze it, but I’ve never honestly tried…

**Reserve liquid “stock” for other use.  I like to use mine in soup and/or chicken & dumplings.  Good stuff, my friends, good stuff.

To serve: warm chicken, if needed with a little bit of reserved liquid – it helps keep it moist.  It can also be used in any recipe calling for cooked chicken.

Clean, simple, and tasty chicken… all while you while your Sunday errands away, or Monday… or Hump day – you get it!!  I like mine with extra gravy. Or salsa. Or hot outta the pot. We love chicken, what can I say. More recipes using same to come!
