Honey Bun Cake | All the glory of the 70's snack treat in a large coffeecake

This truly is like one huge honey bun.  With pecans, which is only a really fabulous bonus – especially when we are talking about coffee cake.  Another amazing thing about this cake.  It is very low effort for a very big return.  The majority of the time is baking and the consuming. Hard to argue with that!

I kept seeing is roll, no pun intended, across Pinterest.  It smells glorious when you take it out and poor over icing and it got rave reviews across my office, moreover many remarks that it indeed tastes like a honey bun!

So if you’ve ever loved the pre-packaged honey bun, you have a weekly meeting, or like my Southern Mema you simply believe you should have something on hand for impromptu guests:

 HONEY BUN CAKE | COFFEECAKE

  • 1 box Betty Crocker™ SuperMoist™ yellow cake mix
  • 3/4 cup vegetable oil
  • 4 eggs
  • 1 container (8 oz) sour cream (or 1 cup)
  • 1 cup packed brown sugar
  • 1/3 cup chopped pecans
  • 2 teaspoons ground cinnamon
  • 1 cup powdered sugar
  • 4 tablespoon milk
  • 2 teaspoon vanilla

 DIRECTIONS: 

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease and lightly flour 13×9-inch pan, or spray with baking spray with flour. {or any large dish you please}
  • In large bowl, beat cake mix, oil, eggs and sour cream with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Spread half of the batter in pan.
  • In small bowl, stir together brown sugar, pecans and cinnamon; sprinkle over batter in pan. Carefully spread remaining batter evenly over pecan mixture.
  • Bake 44 to 48 minutes or until deep golden brown. In another small bowl, stir powdered sugar, milk and vanilla. Prick surface of warm cake several times with fork. Spread powdered sugar mixture over cake. Cool completely, about 1 hour. Store covered.
