Spicy Honey-Brushed Chicken Thighs | A barbecue-like flavor with the convenience of the broiler

We made these for dinner the other night.  They are very flavorful and have a surprising twang that is quite pleasing.  Besides being very tender & tasty this recipe is quick, quick, quick.  Which is great for a family meal, especially after a long day. Or any day really.  Hard to say bah! to a healthy meal in under 30 minutes. {At least it is for us!}

So if you are looking for a quick-fix on a weeknight.  Or something a little bit sweet, a tad spicy, and well just plain delicious – look no further.  The black bits where the edges get crisp & charred are my favorite part!! {random, but true.}

SPICY HONEY-BRUSHED CHICKEN THIGHS

  • 2 teaspoons garlic powder
  • 2 teaspoons chili powder
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground red pepper
  • 8 none skinless, boneless chicken thighs
  • none Cooking spray
  • 6 tablespoons honey
  • 2 teaspoons cider vinegar

DIRECTIONS: Preheat broiler.

Combine first 6 ingredients in a large bowl. Add chicken to bowl; toss to coat. Place chicken on a broiler pan coated with cooking spray. Broil chicken 5 minutes on each side.

Combine honey and vinegar in a small bowl, stirring well. Remove chicken from oven; brush 1/4 cup honey mixture on chicken. Broil 1 minute. Remove chicken from oven and turn over. Brush chicken with remaining honey mixture. Broil 1 additional minute or until chicken is done.

Quick, healthy, & tasty – and I’m done!!  Makes some darn good sandwiches, if you have leftovers…
