Make something as bright as the sun, as sweet as a late harvest Riesling and just plain lovely.  Make this sorbet for a hot Summer day and you will have no regrets.  It is sweet, sultry sunshine in a spoon. It’s apricot. Yes, being apricot is a bonus all on its own.  But, seriously this cocktail like sorbet is the perfect frozen treat.  The sweetness of a sparkling wine {we used Moscato D’Asti} pairs perfectly with this stone fruit. It also gives the dessert that something, something that will have everyone asking you for the ingredients!

Don’t have an ice cream maker? No worries. Turns out when I saw it and sprung into action I hadn’t unpacked mine.  Yeah, oops…  it just means you are gonna have to be a little more patient on the freezing time {freeze about 4 hours, or until solid}.  While probably not the smooth texture an ice cream machine would yield, the results didn’t disappoint.  So feel free to make this dish sans machine!

Choose the ripest most fragrant apricots you can find for this dish. And feel free to serve up the sorbet with the leftover wine as a float {almost a frozen Bellini style cocktail}! Any way you serve it this is pure loveliness.

SPARKLING APRICOT SORBET

  • 1 cup sugar
  • 2 cups sparkling wine
  • 2 (2-inch) strips lemon peel
  • 1 1/2 pounds apricots, peeled, pitted, and halved
  • Dash of salt

{TIP} Prepare apricots – cut about 1 inch X across bottoms, blanch in boiling water for about 20 seconds and then plunge into ice water. The skins should peel off easily.

Combine sugar, sparkling wine, lemon peel, apricots, and salt in a medium saucepan over medium-high heat. Bring to a boil. Reduce heat, and simmer for 10 minutes.

Remove from heat, and cool. Discard lemon peel. Transfer mixture to a blender; process until smooth. Pour mixture through a sieve over a bowl; discard solids. Cover and chill.

Transfer mixture to the freezer can of an ice cream freezer; freeze according to manufacturer’s instructions. {Since I didn’t have mine I simply churned it for a few minutes with my stand mixer and returned the metal bowl to the freezer}

Scrape sorbet into a freezer-safe container; freeze 2 hours or until firm. From A New Way to Cook Light, a new Summer favorite ❤
