This is the trifecta of corn – sweet, salty and a little bit spicy too.  Corn gets special treatment and a little smoky sass on the grill, then it is slathered in sweet & spicy butter {honey butter spiked with roasted jalapenos}.  It is a killer side dish that is worth the prep!

We love trying new corn recipe and this on will definitely cross our table again! Here is to Summer, grilling and 8 ears of corn for $1!!!  Another bonus, this recipes combines  corn and limes, which we have found over the years yields a good corn product. Corn & Limes were meant to be, who knew?

GRILLED CORN ON THE COB WITH ROASTED JALAPEÑO BUTTER

  • 1 jalapeño pepper
  • 1 Tablespoon of canola oil, or high heat oil
  • 7 teaspoons unsalted butter, softened
  • 1 teaspoon grated lime rind
  • 2 teaspoons honey
  • 1/4 teaspoon salt
  • 6 ears shucked corn

Directions:

Preheat grill to medium-high heat. Place jalapeño on grill rack lightly coated with a high-heat oil {such as canola}; cover and grill for 10 minutes or until blackened and charred, turning occasionally. Place jalapeño in a small paper bag, and fold tightly to seal. Let stand for 5 minutes. Peel and discard skins; cut jalapeño in half lengthwise. Discard stem, seeds, and membranes. Finely chop jalapeño. Combine jalapeño, butter, lime rind, honey, and salt in a small bowl; stir well.

Prepare and clean corn, rub lightly with remaining oil, salt & pepper to taste and place corn on grill rack. Cover and grill for 10 minutes or until lightly charred, turning occasionally. Place corn on serving plate; brush with jalapeño butter. Enjoy.

It’s that simple and delicious folks.  A slightly modified jewel off the pages of Cooking Light: A New Way to Cook Light. I’ve found over the years there are two camps of corn eaters: off the cob & no way, Jose! cut it off!! I’m a cutter. It’s true. Either way you serve it though it’s good eats!
