Fix this French Toast Casserole tonight and thank yourself tomorrow when you wake up, pop it in the oven and viola! wow your guests and kids.  Delicious, easy, and unique brunch. Seriously folks. Time for the Sunday morning pancakes and waffles to step aside. This is devilishly good.  I flipped mine out for a tarte tatin type presentation of this Caramel Upside Down French Toast.

I doubled the caramel recipe and used almost an entire loaf of French bread (same amount of egg mixture). It was the perfect consistency and made a batch big enough for an office birthday celebration. Doubling the caramel also made sure each piece was sufficiently sauced. But, don’t underestimate the jazzed up cool whip, because it sings with this dish and by itself. {And it makes Summer fruit twice as nice!}

CARAMEL UPSIDE DOWN FRENCH TOAST

  • 1 1/3 cup packed dark brown sugar
  • 4 tablespoons butter
  • 4 tablespoons dark corn syrup
  • butter, for greasing the dish
  • 1 1/2 cups 1% low-fat milk
  • 1 teaspoon vanilla extract
  • 1/4 cup orange juice
  • 1/4 teaspoon salt
  • 1 teaspoon zested orange rind
  • 4 large eggs
  • 6-10 (1 1/2-inch-thick) slices French bread
  • 1 Large container of Cool Whip Topping
  • 1- 1 1/2 Tablespoons Grand Marnier (orange-flavored liqueur)
  • 1/8 teaspoon zested orange rind
  • 1 teaspoon vanilla

DIRECTIONS: Combine first 3 ingredients } in a small, heavy saucepan over medium heat. Cook 5 minutes or until bubbly and sugar dissolves, stirring constantly. Pour sugar mixture into bottom of a extra large baking dish coated with butter {or cooking spray}. I used a larger pan, due to increased caramel and bread, pick something that fits the amount of bread/caramel you are using. Spread mixture evenly over bottom of pan. Set aside; cool completely.

Combine milk and next 5 ingredients (through eggs) in a large shallow bowl; stir with a whisk. Dip 1 bread slice in milk mixture; arrange bread slice over sugar mixture in dish. Repeat procedure with remaining 5 bread slices {I used an entire loaf, minus the ends}. Pour any remaining egg mixture over bread slices. Cover and refrigerate overnight.

Preheat oven to 350°. Bake at 350° for 30 minutes or until lightly browned.

While casserole bakes, combine whipped topping, zest, vanilla and Grand Marnier. Place 1 bread slice, caramel side up, on each of 6 plates; top each serving with topping and fresh fruit.

OR!!! Flip it out onto a large dish like an upside down cake for a grander presentation!
